The main course would be Baked Garlic Thyme Chicken, Macaroni and Cheese, and Honey Dijon Spinach Salad. And the Dessert would be Raspberry Cookies. Let us take a quick look on how you can make the Baked Garlic Thyme Chicken. You will need 1/4 cup of softened unsalted butter, 2 scallions chopped, 2 minced cloves of garlic, 1 teaspoon of lemon juice, 1 teaspoon of dried thyme leaves, 2-1/4 lbs. of whole chicken, which is rinsed and patted dry.
Now you need to preheat the oven to about 350 degrees. Then you should combine all the ingredients except the chicken and season them. Now spread the seasoned butter over the chicken and place the chicken in the oven, breast down, for about 35 minutes. Then turn the breast side up and bake for another 35 minutes until it is tender. This recipe serves four people. Happy 30th Anniversary and lots of fun.
